What Is Korean Bingsu?
(And Why You Need to Try It)

It's not what you're picturing

When most people hear "shaved ice," they picture a paper cone of flavored syrup from a county fair stand. Bright red. Slightly crunchy. Melts before you get to the car. That's not bingsu. Not even close.

Korean bingsu (빙수) is a dessert that's been a staple in Korea for centuries — and over the past decade it's gone from a niche Korean cafe treat to one of the most Instagrammed desserts in the world. There's a reason for that.

The word "bingsu" literally means "ice water" in Korean — but what ends up in the bowl is anything but plain.

What makes it different: the ice

The key is in how the ice is made. Traditional Korean bingsu is made from frozen milk, not water. When it's shaved, it comes out with a texture closer to freshly fallen snow — soft, airy, and almost powdery. It melts on your tongue instead of crunching against your teeth.

That difference in texture changes everything. It absorbs toppings rather than fighting them. It stays cold longer. And it doesn't turn into a watery puddle in five minutes.

The toppings are the whole point

A good bingsu is all about what goes on top — and this is where Korean dessert culture really shines. Classic versions are topped with red bean paste (pat bingsu), sweet condensed milk, and rice cake pieces. Modern versions have exploded into every flavor imaginable.

Why is it hard to find in St. Louis?

Making authentic bingsu requires a specific shaving machine designed for milk ice — different from the equipment used for regular shaved ice or snow cones. Sweet Tapioca is one of the only places in West County serving the real thing.
